› Grapes are harvested at the coolest hours of the day, and then pressed after a short skin-maceration (4 to 6 hours)
› Settling of the lees at low temperature (8-10°C)
› After 48 hours, clear juice is racked
› Fermentation temperature is controlled at 16°C
› Ageing in vats for 6 months before bottling.
